What the heck. When life sucks, succumb to temptation. Just eat the brownie and never mind the diet. The deliciously clever "Life Is Short, Eat The Brownie" pendant is by Nancy Wu who designs with a sense of humor. As she says, it's "a daily memo to live a little." I couldn't agree more.
Now that I've mentioned brownies, you might like this really quick recipe to get your brownie fix in about 15-20 minutes flat. I usually use a gluten free flour mix (like rice or potato flour) to make it lighter. This recipe will thus work regardless of where you live - North American wheat flour is gluten rich so flour recipes here are not workable for say, British cooks.
MICROWAVE BROWNIES
1/2 cup margarine
1 cup sugar
1/2 cup nuts
1/2 cup cocoa
2 eggs
1/4 teaspoon baking powder
1 teaspoon vanilla
3/4 cup gluten-free flour
1. Melt margarine in microwave - about 45 seconds on High.
2. Add eggs, sugar and vanilla and beat until creamy.
3. Mix in all dry ingredients until just blended.
4. Spread evenly in 8" square glass dish.
5. Microwave approximately 10 minutes on Medium.
6. Top should be dry and springy to touch.
7. Cooling is highly recommended before stuffing into mouths!
